Banana Bread


We always seem to have a couple of skanky bananas that turn almost overnight  We usually throw them in our breakfast smoothie but here is another great idea especially for the snackbox (or with your morning coffee) to turn those over, over ripe bananas into a delicious treat.  And for this recipe the bananas can be almost walking away on their own, the riper, the better!


2 overripe bananas, mashed

1 teaspoon vanilla paste

1/2 cup milk

2 tablespoons butter, melted

2 eggs lightly whisked

2 cups wholemeal self raising flour

1/2 cup coconut or brown sugar

1 teaspoon powdered ginger

1 teaspoon cinnamon

1 large handful of rolled oats and extra brown (or raw) sugar to sprinkle on top (optional)



Preheat oven to 180oC.  Grease and line a loaf pan with baking paper.

Mix together mashed banana, vanilla, milk, butter and whisked eggs.

Sift flour, cinnamon, ginger and pinch salt into mixing bowl. Stir in brown sugar.  Make a well in the centre and pour in wet ingredients. Mix until just combined.  Pour into loaf pan and sprinkle top with oats and extra sugar.

Bake in oven for 40-45 minutes.  When cooked remove from oven and leave in tin for about 5 minutes.  Turn out and serve while warm.

If there is any left the next day, slice and toast and serve with butter.
