Chrissie Swan’s Brown Rice Summer Salad

In a big bowl add…
3 cups brown rice, cooked & cooled (refrigerated overnight)
1 x red onion, finely chopped
1 x red capsicum, finely chopped
1 bunch of coriander, chopped
1/2 cup raisins
1/2 cup toasted slivered almonds
1 x 400g tin of chickpeas, drained and rinsed

4 tablespoons olive oil
juice of 2-3 limes
4-5 tablespoons honey
2 teaspoons curry powder
1 teaspoon cumin powder
salt to taste

Combine dressing in a jar, add lid and shake like CRAZY!!
Poor into bowl and serve!
