Arianne of “Cakes by Arianne” has given us this fabulous healthy recipe. It’s great with a cup of tea or for the kids snack box. You can practically use any fruit you want but while the nectarines are in season, give it a go.
1 cup cooked quinoa
1 cup untoasted muesli
1/4 cup shredded coconut
1 tspn ground cinnamon
1 tspn ground nutmeg
4 tbspn brown sugar
2 tbspn maple syrup (pure organic if possible)
1 cup chopped nectarines (or apples)
Preheat oven to 180c (170c for fan forced).
Combine dry ingredients in a medium sized bowl. Add remaining ingredients until just combined. Spray mini muffin pans well with cooking spray, including top surface of tray. Fill with 1 tbspn mixture.
Bake for 15-20 minutes.
