Seed Slice

Seeds may be tiny but they certainly pack a punch in the health department.  They contain nutrients such as protein, fibre, iron, omega-3 fatty acids to name a few.  When you need an afternoon sweet treat, grab this recipe for a healthier option.

1 cup Self Raising Flour
3/4 cup rolled oats
1/2 cup almond meal
1 1/2 cups of Natural Seed mix (pumpkin, sunflower, pinenuts)
1/2 cup sesame seeds
1/4 cup chia seeds
1/2 cup chopped dried Apricots (or other dried fruit like pineapple or sultanas)
50g Butter
1/4 coconut sugar
2/3 cup of pure maple syrup (or golden syrup)
Preheat oven to 160oC
Line a small slice tray with baking paper.
Place all dry ingredients into a mixing bowl.
Melt butter with sugar stovetop until sugar dissolves.  Add in maple syrup and pour over dry ingredients to combine.
Press into the lined tray and bake in oven for approx 30 mins until browning.
Leave to cool completely in the tin otherwise it will crumble when you try to slice it.
