I was having a play with a Yonanas Dessert Maker not so long ago – so many granita recipes are sugary and sweet – why not be a little more creative and try this savoury version using the traditional base ingredients of gazpacho soup!
Prep time: 20 minutes
1 red capsicum, deseeded, chopped
1 yellow capsicum, deseeded, chopped
1 green capsicum, deseeded, chopped
5 large truss tomatoes, chopped
1 garlic clove
1 jalapeno pepper
½ bunch coriander
½ bunch parsley
½ bunch basil
100ml extra virgin olive oil
- To make gazpacho, place all ingredients in a food processor. Process until chunky (you can do this in batches if your processor is not big enough).
- Freeze into ice cubes. Pass ice cubes through Yonanas machine to make gazpacho granita.
- Serve gazpacho granita in a chilled cocktail glass with a splash of tomato juice.
